Default Chipotle Adobo Seared & Baked Chilean Sea Bass

I hope it's okay to post a recipe here, as the other recipe section seems a little busy and I want people to be able to find this...

This recipe is very extremely simple and while it does feature a fish that brings higher prices, you can make this at home in less than 20 minutes at a cost of around $10 to serve two people. The Chipotle Abobo sauce was inspired by Jeffrey Saad, Next Food Network Star finalist on the Rachael Ray show that was broadcast on July 2nd 2009 (filmed in January 2009).

Ingredients;

1/2 Pound Chilean Sea Bass
10 oz can Chipolte Peppers in Abobo sauce
2 Tablespoons unsalted butter
1 Tablespoon Lemon Juice
Salt & Pepper
1 Tablespoon Dill weed


Preheat oven to 375.

Generously salt and pepper both side of fish fillet. Kosher salt is a nice choice or any will do. Fresh ground black pepper, ground in a coffee grinder is also an excellent choice yet any will do.

Heat skillet on high until butter is melted and pan sear each side of the fish for about 30 seconds.

Bake fish for 14-18 minutes without turning, until 140F internally.

Top with dallop of Chipotle Adobo sauce and sprinkle of Dill Weed.

Serve right away with a side of veggies and iced tea with lemon or a white wine.

Chipotle Adobo sauce (simple suggestion by Jeffrey Saad - Next Food Network Star finalist on Rachael Ray July 2nd 2009 broadcast)

Combine entire can of chipotle peppers and adobo sauce with 2 ounces water into food processor (or stick blend in a cup). I added 1 TB lemon juice as well. Pan heat mixture until simmering before adding dallop to top of seared and baked fish fillet.

This recipe should also work well with Orange Roughy or any meaty white fish.

Now THAT makes me hungry!

Where can you get Chilean Sea Bass? Isn't that an endangered species?

Sounds so easy. I am glad to see a recipe inspired by one of the next food network star people as that's what it's supposed to be about really, the food right?

Picbuddy,

I am really glad to see you posting a recipe here and please do keep them coming. I have used one of your taco recipes that I found somewhere else online and continue to make that one all the time.

I agree that the other "What I made at home" etc forum is very busy with the RSS feeds but hang in there. One of the new features that will be added fairly soon as part of the new site design will be a recipe section. I hope you and others will contribute to it. It's coming soon so stay tuned.

Amber, I don't know about Toothfish being really endangered, I can't afford it so have never baked it.

Chilean Sea Bass is NOT an endangered species. It was considered at a time but is on level fishing regulations.

While it can sell for up to $30 a pound, you can get it on sale for $14.99 or less which is what I based the recipe on. Only a 1/2 pound piece which is enough for two people with sides.
